Goodness gracious. 3 1/2 cups of sugar and 2 sticks of butter later…. delicious lemon bars.
That was not a typo. 3 1/2 cups of sugar. 2 sticks of butter. I am not proud of this, but I will not apologize for great tasting lemon bars. 🙂
Lemon Bars: Preheat oven to 350

2 sticks butter, at room temp
½ cup sugar
2 ¼ cups white rice flour + ½ tspn xanthan gum + pinch of salt
Cream the sugar and butter together. Mix in the flour/xanthan gum/salt until combined. Yes, it looks greasy. Yes it was 2 sticks of butter. Yes it will be delicious.
Spread the dough out into a 13×9 inch (greased) pan, making about ½ an inch edge up the sides. Bake for 15-20 minutes until it is golden brown. Let cool. Meanwhile, make the filling.
6 large eggs, room temp
3 c sugar
1 c lemon juice
1 c white rice flour
Blend the filling ingredients together until light and fluffy. Pour into the baked crust and bake for an additional 30-35 minutes until set. nocoupons Cool until room temperature and sprinkle with powdered sugar.
